A Ten Minute Lunch | Spicy Vermicelli

Since it is a universally known fact that I am overworked, let it also be known that I do not have time to spend eons on making nice food. I do make nice food but once a day is enough. For all other times, its quick fix solutions.


This recipe takes about 10 minutes to make, including prep time. Its easy, quick and healthy too! Its quite versatile so you can add whatever vegetables you like - just, please, just don't make weird combinations like adding spinach, cauliflower, beets or such like.




Vermicelli - that's what I call it, I have no idea if any other name exists for it! You can get it anywhere - fancy superstores and the friendly neighborhood shop (not so friendly if you live in Delhi.)

1 cup toasted vermicelli
1 onion, diced
1 potato, diced
1 carrot, diced
1/4 cup french beans, diced
1/4 cup boiled corn
5-6 curry leaves
1 green chilly
1 tsp mustard seeds
Salt to taste

In a frying pan, heat 1 tbsp sunflower oil. Add mustard seeds and curry leaves when the oil is hot. Once the mustard seeds stop spluttering, add onions, green chilly and potatoes. Cook till the onions become translucent and add the remaining vegetables. After the vegetables have been cooking for about two minutes, add a cup of water and cover the pan with a lid. Cook for 3-4 minutes till the vegetables are cooked and add salt.



And last step! Add vermicelli, cover the pan and cook for about a minute or two till the vermicelli becomes soft. Serve hot.

See? As easy as a ten minute meal should be!
